White Fish Fillets | 4 pound | ||||||||
Breadcrumbs, Panko | 1 5/8 Cup | ||||||||
Coconut, Shredded | 1 5/8 Cup | ||||||||
Margarine | 1 1/3 Cup | ||||||||
Sugar, Granulated | 3/8 Tsp | ||||||||
Salt | 3/8 Tsp | ||||||||
Procedures: | |||||||||
1. | Melt smartbalance in bowl. | ||||||||
2. | Combine panko, coconut, salt, sugar. | ||||||||
3. | Dip each piece of fish in smartbalance, then panko/coconut mixture, then place on baking sheets. | ||||||||
4. | If there is
panko/coconut left over, top fish with it & drizzle with any leftover smartbalance. |

5. | Heat oven to 400 & bake fish until 145 degrees. | ||||||||
6. | Serve 4 oz fish per person (about the size of a deck of cards) | ||||||||
