Coconut Fish                
Pangasius or other white fish  breaded in panko & shredded coconut.            
Portion Size: 4 ounce

Ingredients 48  
White Fish Fillets 12 pound  
Breadcrumbs, Panko 4 3/4 Cup  
Coconut, Shredded 4 3/4 Cup  
Margarine 4 Cup  
Sugar, Granulated 3/8 Tbsp
Salt   3/8 Tbsp
                   
Procedures:                
1. Melt smartbalance in bowl.

2. Combine panko, coconut, salt, sugar.        
3. Dip each piece of fish in smartbalance, then panko/coconut
mixture, then place on baking sheets.
       
4. If there is panko/coconut left over, top fish with it & drizzle
with any leftover smartbalance.
       
5. Heat oven to 400 & bake fish until 145 degrees.                
6. Serve 4 oz fish per person (about the size of a deck of cards)
