White Fish Fillets | 12 pound | |||||||||||||
Breadcrumbs, Panko | 4 3/4 Cup | |||||||||||||
Coconut, Shredded | 4 3/4 Cup | |||||||||||||
Margarine | 4 Cup | |||||||||||||
Sugar, Granulated | 3/8 Tbsp | |||||||||||||
Salt | 3/8 Tbsp | |||||||||||||
Procedures: | ||||||||||||||
1. | Melt smartbalance in bowl. |

2. | Combine panko, coconut, salt, sugar. | |||||||||||||
3. | Dip each piece of fish
in smartbalance, then panko/coconut mixture, then place on baking sheets. |

4. | If there is
panko/coconut left over, top fish with it & drizzle with any leftover smartbalance. |

5. | Heat oven to 400 & bake fish until 145 degrees. | |||||||||||||
6. | Serve 4 oz fish per person (about the size of a deck of cards) | |||||||||||||
